Smashed White Bean, Cucumber and Radish Sandwich

My work lunches have been a little boring lately. I really love sandwiches and should experiment with trying new combinations more often. I saw this Smashed White Bean, Cucumber and Radish sandwich in the June 2011 issue of Woman's Day, cut it out of the magazine and forgot about it until I was meal planning yesterday.

I didn't use dill or the alfalfa sprouts, but otherwise, I followed the recipe.

I enjoyed trying something different for lunch today! I made some to take to work tomorrow as well.

The only thing I found is that maybe the dill adds extra flavor because it's a pretty bland sandwich overall. I didn't really mind, but others might.
